Saada's Ethiopian cous cous

Naturally gluten free


I cannot take credit for this recipe but it was one Saada was happy to share. I had so many of cous cous as a kiddy in London with our family friends. Saada, who is from Ethiopia would cook these when it was time to break the fast during Ramadan or for other special occasions. They are a mix between churros and donuts and could be served with melted chocolate on the side.

Ingredients:


Deep fat frier or sunflower oil in a pan

3 cups SR GF flour

2/3 cup of Sugar

1 egg

Pinch salt

2/3 cup of tepid water to mix

Tbsp oil


Method:

  1. Mix all dry ingredients

  2. Add egg

  3. Add water

  4. Beat altogether till consistency of thick cream

  5. Fill a desert spoon with the mix and carefully drop into the oil until golden brown
